My food allergies and dietary restrictions have made me an expert at adapting recipes and substituting ingredients to recreate the flavors I love in a way that (1) won’t upset my stomach, and (2) won’t kill me. Seriously.⁣
⁣
Baba ganoush comes pretty close to hummus, which I sadly cannot eat, but I don’t mind because I love it more, especially when the eggplant has been grilled or roasted at a very high temperature until the skin is crackly and charred.⁣
⁣
When eggplant is cooked this way, it takes on a smoky flavor hummus can’t compete with.⁣
⁣
Roast some garlic along with the eggplant, and purée it with the traditional flavors — lemon, tahini, sometimes cumin.⁣
⁣

I have a grocery list that I call “the ushe.” You know, the stuff we buy every week, our staples, non-negotiables, the ingredients that allow me to cook any cuisine I want during the week. (I’ll be sharing that with you soon)⁣

I could eat Mexican food every day of my life, and never get tired of it, so I ALWAYS keep cilantro, avocado, citrus, tomatoes, chilies, spices, and peppers on my ushe list, so I can make easy taco bowls like this one.⁣

The rice is made from cauliflower and spiced up with a couple of tablespoons of chipotle in adobo. The rest came together like a breeze. Leftover steak, chopped veg and herbs, and lots of fresh lime and gray sea salt. ⁣

Baba ganoush is one of my favorite spreads, equally for its flavor and simplicity. I first had while visiting Martha’s Vineyard, of all places, at a little vegan sandwich shop across from the ferry when I was in my twenties.⁣
⁣
Smoky, roasted eggplant, ready for the blender + garlic + tahini + sea salt. 🍆 Cumin is optional. Sometimes I add it, sometimes I don’t. I also like to add a pinch or two of smoked paprika. Not traditional, but delicious nevertheless.⁣
