Whole. Belly. Clams! Not my usual, but these are my fav food in the entire world. They absolutely must be eaten along the @visitrhodeisland shore; my go-to spots are Point Judith, Matunuck, or Newport. Nope, they’re not gluten-free, but I’m sure if you asked around, you’d find a place that could accommodate. We’ll miss the @riseafoodfestival this year, but we’ll make up for it when we head back up to help our daughter get settled at @universityofri for her senior year. 🦞

Friday night fish sticks. The breading is 100% gluten free, too, and not the usual weird GF breadcrumbs, or nuts, or seeds. ⁣

It’s potato flakes. ⁣
⁣
Pulse them a few times in a food processor with a spoonful of corn or potato starch, a generous pinch of sea salt, and any other seasonings you’d like. ⁣
⁣
Bread like you normally would, by dipping the fish in potato starch, then a beaten egg, then the (potato flake) coating. Shallow pan fry or bake, and serve with your fav dippers.⁣

I’ve been using the phrase “passion project”

I’ve been using the phrase “passion project” a lot lately. It means exactly what you might think: a project for which you have an overwhelming passion, and take on because it moves you and means something special deep in your soul.

I have many of these, however never enough time to devote to them all. So, a layoff, I figured, would be the perfect time to dive into as many as I could. ⁣
⁣
I’m soaked.⁣
⁣
☑️ I started writing a cookbook⁣
⁣
☑️ I’m speaking with local hospitals about food allergy testing and culinary medicine for patients⁣
⁣
☑️ I’m tracing our Italian genealogy, and in particular, the Chiaverini Sausage Shop on Federal Hill that expanded to Las Vegas after a suggestion from Frank Sinatra⁣
⁣
☑️ I’m sharing recipes with @littleriverfarmri because (1) we’re all about eat local, eat organic (2) I’m grateful for their stewardship, approach to farming, and thoughtfully-grown vegetables that support agriculture and the community in my home state.⁣
⁣
Give them a follow, a heart, and shout out, and visit them online to learn about their pickup and delivery options. Their early-season crops are ready, and you’ll find lots more recipes that highlight their vegetables on their blog as the season continues 🌱💚.⁣

The old “oil or cream” commercial is back on the air, leading you to believe that whipped cream in a can is somehow better and healthier. 🤬⁣
⁣
It’s not. ⁣
⁣
Because I follow the path least processed, I say absolutely no way to the can. Here’s why:⁣
⁣
“cream, water, sugar, corn syrup, nonfat milk, less than 2% of mono- and diglycerides, natural flavor, carrageenan. propellant: nitrous oxide”⁣
⁣
Whipped cream should have three ingredients or less... cream, and if you’d like, sugar and vanilla. ⁣
⁣
That’s it. ⁣
⁣
Be sure to read the labels on your store bought heavy cream, as some brands contain gums and additives to keep the cream from separating, to extend the shelf life, and/or make a cheaper product. Remember, the more additives and junk listed on the ingredient label, the less cream is in the container. Look for heavy cream that⁣
⁣
👉 is organic⁣
👉 as local as possible⁣
👉 does not contain gums⁣
⁣
Heavy cream should only be heavy cream.⁣
⁣
