Baba ganoush is one of my favorite spreads, equally for its flavor and simplicity. I first had while visiting Martha’s Vineyard, of all places, at a little vegan sandwich shop across from the ferry when I was in my twenties.⁣
⁣
Smoky, roasted eggplant, ready for the blender + garlic + tahini + sea salt. 🍆 Cumin is optional. Sometimes I add it, sometimes I don’t. I also like to add a pinch or two of smoked paprika. Not traditional, but delicious nevertheless.⁣

Zucchini-potato fritters with fresh dill and lots of tangy, garlicky sour cream. Not only do these make a great bunless veggie burger, but they’re perfect for breakfast, too by themselves, or topped with an over-medium fried egg. ⁣

The secret to the crispy exterior is (1) squeeze the water out of the grated zucchini and (2) coat them in tapioca flour before lightly pan frying. Recipe soon 💚.⁣
