Have you been in a funk, too? ⁣
⁣
Mine started in December. Well, I guess it really started in October when I was laid off. Wait, it was before then. Late last February, if I really think about it.⁣
⁣
That’s when my parents went into quarantine. A week later, work sent us all home. Then reduced our salaries. Then brought us back and reinstated regular salaries. Then promised no layoffs. Then. Here I am. Home.⁣
⁣
I spend about 6 to 8 hours every dangity-dang day applying for jobs, interviewing, editing cover letters, tailoring resumes. (Sorry to everyone on my list of references 🤪). Looking for a full time job is a full time job.⁣
⁣
This whole experience has led me to question everything. I’ve been laid off from almost every job I’ve ever held in this state. I start to build meaningful programs and partnerships, and then it abruptly ends because the economy and tourism tanks, or a business changes direction.⁣
⁣
A recruiter told me the other day that I should feel proud that I’ve always been in the second or third wave of a layoff because it means they tried to keep me. I’m not sure what kind of validity that holds, but it made me feel good for a few seconds.⁣
⁣
What is the point of meaningful work if it ends up not having any meaning because in two years you’re applying for unemployment again?⁣
⁣
I don’t have answers. I just have funk. I even put my cookbook aside for a couple of months.⁣
⁣
But I made food tonight that I actually felt like photographing for the first time since December. And I have 9 pounds of butter in my fridge, ready for cookbook recipe testing to begin again.⁣
⁣
Maybe the funk is lifting? IDK. ⁣
⁣

I’ve been using the phrase “passion project”

I’ve been using the phrase “passion project” a lot lately. It means exactly what you might think: a project for which you have an overwhelming passion, and take on because it moves you and means something special deep in your soul.
⁣
I have many of these, however never enough time to devote to them all. So, a layoff, I figured, would be the perfect time to dive into as many as I could. ⁣
⁣
I’m soaked.⁣
⁣
☑️ I started writing a cookbook⁣
⁣
☑️ I’m speaking with local hospitals about food allergy testing and culinary medicine for patients⁣
⁣
☑️ I’m tracing our Italian genealogy, and in particular, the Chiaverini Sausage Shop on Federal Hill that expanded to Las Vegas after a suggestion from Frank Sinatra⁣
⁣
☑️ I’m sharing recipes with @littleriverfarmri because (1) we’re all about eat local, eat organic (2) I’m grateful for their stewardship, approach to farming, and thoughtfully-grown vegetables that support agriculture and the community in my home state.⁣
⁣
Give them a follow, a heart, and shout out, and visit them online to learn about their pickup and delivery options. Their early-season crops are ready, and you’ll find lots more recipes that highlight their vegetables on their blog as the season continues 🌱💚.⁣

We had literally just finished a cooking marathon, and I remember thinking to myself, “I can’t believe I just flipping did that!!!” What a great moment.⁣

The old “oil or cream” commercial is back on the air, leading you to believe that whipped cream in a can is somehow better and healthier. 🤬⁣

It’s not. ⁣
⁣
Because I follow the path least processed, I say absolutely no way to the can. Here’s why:⁣
⁣
“cream, water, sugar, corn syrup, nonfat milk, less than 2% of mono- and diglycerides, natural flavor, carrageenan. propellant: nitrous oxide”⁣
⁣
Whipped cream should have three ingredients or less... cream, and if you’d like, sugar and vanilla. ⁣
⁣
That’s it. ⁣
⁣
Be sure to read the labels on your store bought heavy cream, as some brands contain gums and additives to keep the cream from separating, to extend the shelf life, and/or make a cheaper product. Remember, the more additives and junk listed on the ingredient label, the less cream is in the container. Look for heavy cream that⁣
⁣
👉 is organic⁣
👉 as local as possible⁣
👉 does not contain gums⁣
⁣
Heavy cream should only be heavy cream.⁣
⁣

For a few weeks out of the year, we can get some pretty wild cold snaps. While short-lived, they certainly make this Rhode Island native nostalgic for cold-weather comfort food.⁣

Tonight I roasted organic cauliflower with a cheesy, creamy sauce, kissed with a touch of nutmeg. ⁣
⁣
If soup is more your speed when the weather changes, this could easily be whirled up in a blender or food processor for a cheesy cauliflower soup. 💗⁣

It’s not the cookbook I ever thought I’d write

It’s not the cookbook I ever thought I’d write. But it’s the right one to write, right now.⁣
⁣
I wouldn’t consider myself a baker, but like many of you who found yourselves with a lot of extra time on your hands from COVID layoffs, I fully immersed myself in the process.⁣
⁣
My process is a little different though, because I have a gazillion food allergies and intolerances. ⁣
⁣
It’s why I switched careers. It’s why I became a chef. It’s why I became a nutrition expert. ⁣
⁣
In addition to legumes, tree nuts, and (most recently) cassava and date allergies, I’m severely gluten intolerant. I swell up. My ear canals and nasal passages become blocked. My vision becomes blurry. I forget things. My speech becomes slurred. I develop a slight lisp. Sometimes I feel dizzy. Sometimes I feel tingly. Sometimes I feel lethargic and have to close my eyes.⁣
⁣
Needless to say, the stuff affects me greatly, neurologically, so I avoid it as much as possible.⁣
⁣
I’ve spent the last several months testing and testing and testing gluten-free flour blends that are easy to make at home, with minimal ingredients, minimal binders, and without highly processed xanthan gum. ⁣
⁣
On November 18th, I wrote, “I DID IT!” on a piece of notebook paper. And then I cried because I was so excited.⁣
⁣
I’ve written almost 100 baking recipes so far, all of them gluten-free versions of your favorite breads and sweets, so you can eat what you love.⁣
